Granola chia pudding

These little seeds pack a punch! Believed to have originated with the Aztecs in Central America, chia seeds are a fantastic source of omega-3’s, dietary fiber, protein, and a whole host of essential minerals (including calcium, iron, magnesium, and zinc). Naturally gluten-free and high in antioxidants, chia seeds can aid in digestion, help protect against heart disease, and help keep you satiated for a longer period of time. Great especially for endurance athletes and flavorful to boot, this recipe is the perfect complement to your Tokyo Olympics viewing experience!

Ingredients:

  • 3 tbsp chia seeds

  • 2/3 cup nut milk of choice

  • 1/4 cup dairy-free yogurt (Forager is a great option)

  • 1/2 banana, sliced

  • 1/4 cup granola of choice

Instructions:

  1. Layer the chia seeds on the bottom of a tall glass cup or Mason jar,

  2. Add the yogurt, granola, sliced banana, and nut milk.

  3. Stir well and refrigerate overnight.

  4. Quintuple the recipe for a week’s worth of breakfasts!
