Sprouting jerk

Roasted brussels sprouts are a staple all year at our house. With this wave of 80-degree weather (finally!) the past few days, I thought I’d give my sprouts a bit of extra kick one of my favorite jerk seasonings. Let me know what you think!

Ingredients:

  • brussels sprouts

  • 1 can of chickpeas, rinsed and dried

  • jerk seasoning of choice

  • oil of choice (I used avocado oil and unflavored coconut oil)

  • thyme

  • coriander

  • all spice

  • sea salt

  • optional: cauliflower, maple syrup

Instructions:

  1. Preheat oven to 425 degrees F. Quarter the brussels sprouts and drain the can of chickpeas.

  2. Add oil and chickpeas to pan or griddle, and cook about 5 minutes until browned and slightly crispy.

  3. Add the brussels sprouts (and cauliflower, if using) to the pan. Season with salt and cook for about 5 more minutes.

  4. Transfer the mixture to an oven-safe dish and sprinkle with the jerk seasoning and spices.

  5. Roast for 15-20 minutes, allow to cool, and serve with coconut rice or by itself as a healthy snack!
